Green Hat Gin is a grain-to-glass gin distilled at New Columbia Distillery, in Washington D.C. The Green Hat name is a reference to George Cassiday, the man in the green hat who wandered Capitol Hill in the 1920’s, slinging illicit alcohol to the D.C. politicians who themselves enacted Prohibition. Business was so good, according to him, that he found himself “hustling from the time the offices opened at 9 o’clock in the morning until well along in the evening.”
The gin begins with a base spirit distilled from soft winter wheat in a traditional copper pot still. Botanicals, including juniper, various citrus, fennel, lemongrass, and celery seed are imparted through vapor infusion. The result is a modern twist on classic, with Juniper arguably the main character, but with a rich and involved supporting cast of citrus and florals, with a hint of spice. If you are looking for an upgrade on your easy to grab, workhorse gin, this should be a strong contender.
