na is made from Pedro Ximenez grapes which are left in the sun to become raisins before pressing. The fermentation is interrupted by the addition of alcohol to 15% leaving a high residual sugar content. The wine is then aged in oak for an average of 6 years in American butts in the traditional Solera System.
