A Sauterne wine is make from grapes affected by Botrytis Cinerea which is a fungus that attaches to the grapes which dehydrates them thereby creating more concentrated sugars in the grapes. Once the wine is vinified, the flavours are honey, apricot, toasted baking spice. Fresh acidity and alcohol keep this wine balanced.
